“Very well. Do you have any recommendations?”
“With your meal I think the Shiraz would make an excellent accompaniment.”
“I will have the Shiraz, then, thank you.”
“Excellent. Here is the bottle.”
“Mm. Yes, looks good.”
[Sommelier pours a taste of wine, gives it to the diner]
“Is it to your liking?”
“You know, I never do this, but no. I was expecting a more balanced fruit flavor.”
“That is no problem. My mistake. Perhaps you would like to try this Cabernet? It is very subtle.”
“Yes, sounds perfect.”
[Sommelier pours a taste of wine, gives it to the diner]
“Is it to your liking?”
“Oh, my. I’m so, so sorry. I was just thinking of something with more notes of kirsch and clove.”
“So you want a wine that is exactly like the Dry Stack Grenache?”
“I guess so.”
“But we do not have that wine.”
“I guess not. A pity.”
“So what exactly would you like me to do, sir?”
“Can you mix together a bunch of wines to approximate the Dry Stack?”
“No, sir.”
“Are you sure?”
“Yes, sir.”
“But you are a sommelier.”
