The year was 2199. The digital cowboy looked down upon the Pacific Complex that sprawled up the West Coast. The sunlight sparkled off the steel buildings, in the same way it glittered off his Iron Horse.
Naturally, this story has nothing at all to do with the 2007 Brut Rose. And why? Because you already know everything there is to know about this Brut Rose. Seriously, you do. It’s fruity, almost creamy, one of the most vivid of the sparkling wines that Iron Horse offers. So what else could we say beyond that?

Hand-harvested in the chill of early morning the Pinot Noir grapes are destemmed into stainless steel tanks where they are cold-soaked (using dry ice) for seven days. Steely Chardonnay is blended in to add a firm acid backbone. After pressing the juice slowly ferments in stainless steel tanks at 62? to 65? f retaining the bright fresh Pinot Noir fruit tones. The dosage for the 2007 Brut Rose is a 22 ml of special Bland de Blancs Lex (a syrup made of 2 ml sugar and 20 ml pre-second fermentation Chardonnay).
